  • eggplants
  • cooking oil
  • salt
  • onions
  • garlic
  • tomatoes
  • water
  • carrots
  • green paper
  • curry powder
  • royco

Steps to Follow – our Local method.

  • Place a clean saucepan on a lit charcoal stove.
  • Add cooking oil to the saucepan.
  • Add garlic to the saucepan.
  • Add chopped onions to the saucepan.
  • Add salt to the saucepan.
  • Add chopped tomatoes to the saucepan and cover the saucepan.
  • Chop your eggplants into desired pieces as the tomatoes are boiling.
  • Open the saucepan on the stove and stir the mixture.
  • Re- cover the saucepan and the mixture to boil for about a minute.
  • Open the the saucepan and add 1/2 cup of water to the mixture and then cover again
  • As you complete chopping your egg plants then re-open and stir
  • Add your chopped eggplants into the saucepan and cover for about a minute
  • Open the saucepan and stir evenly for about a minute
  • Cover the saucepan again and leave the mixture to boil for about 2 minutes
  • Open the saucepan again and stir for about a minute
  • Add 1/2 cup of water and stir
  • Add another 1/2 cup of water
  • Add grated carrots to the mixture
  • Add chopped green paper to the mixture and evenly stir
  • Add curry powder to the mixture and stir
  • Aover for about a minute and then open the saucepan again
  • Add your dissolved royco to the mixture and stir evenly
  • Cover the saucepan and the saucepan to boil for about 30 seconds
  • Remove the saucepan from the charcoal stove and serve your ready eggplant stew.
