Steps to Follow – our Local method.
- Slaughter the duck and remove all the feathers very well
- get a clean washing utensil sponge (without soap)and clean your duck very well
- chop duck into pieces
- wash your pieces of duck as place them on a roaster (akatimba)
- roast until it turns golden brown
- re- chop the big pieces as you place them into a clean saucepan , with chopped garlic
- add water to the saucepan and cover it
- place your saucepan on a lit charcoal stove
- cook for about 10-15 minutes
- get another clean saucepan
- place it on a lit charcoal stove
- add cooking oil to the saucepan and wait till its ready
- add chopped onions and green paper to the saucepan and stir
- add chopped tomatoes to the saucepan and stir
- add salt to the saucepan and stir well
- add chopped cotmeal and grated carrots to the saucepan and stir
- add curry powder to the saucepan
- add African spices to the saucepan and evenly stir
- add your ready boiled soup to your fried ingredients and stir
- add your fried ingredients to your cooked duck and stir
- place your saucepan on a charcoal stove
- add your ready dissolved Royco to the saucepan and stir
- cover and cook till the sauce is ready and then serve
